Rendang Fried Rice Recipe

Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1/2 cup leftover rendang meat, shredded or use ready-made rendang from the store (optional)
  • 2 tbsp Rendang Spices Cap Rempah Minang
  • 2 tbsp cooking oil
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 1-2 red chilies, chopped (optional, for heat)
  • 1 egg (optional, for topping)
  • 1 tbsp soy sauce
  • 1 tbsp sweet soy sauce
  • Salt and pepper to taste
  • Fried shallots, for garnish
  • Sliced cucumbers and tomatoes, for serving

Instructions:

  1. Prepare the Rice:
    • Make sure the rice is cold and separated into individual grains. If using freshly cooked rice, allow it to cool completely before frying.
  2. Sauté the Aromatics:
    • Heat 2 tbsp of cooking oil in a large pan or wok over medium heat.
    • Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant, about 2 minutes.
  3. Add the Rendang:
    • Stir in the shredded rendang meat and 2 tbsp of the Rendang Spices Cap Rempah Minang. Fry for another 2 minutes until the meat is heated and well-coated with the sauce.
  4. Fry the Rice:
    • Add the cooked rice to the pan, breaking up any clumps. Stir well to combine the rice with the rendang meat and sauce.
    • Add the soy sauce, sweet soy sauce, and a pinch of salt and pepper. Continue to stir-fry for 3-5 minutes until the rice is well-coated and heated through.
  5. Cook the Egg (Optional):
    • In a separate small pan, fry an egg sunny-side up or as desired. This will be used to top the fried rice later.
  6. Garnish and Serve:
    • Serve the nasi goreng rendang on a plate, topped with the fried egg.
    • Garnish with fried shallots and serve with sliced cucumbers and tomatoes on the side.
