
Ingredients:
- 2 cups cooked rice (preferably day-old)
- 1/2 cup leftover rendang meat, shredded or use ready-made rendang from the store (optional)
- 2 tbsp Rendang Spices Cap Rempah Minang
- 2 tbsp cooking oil
- 3 cloves garlic, minced
- 2 shallots, thinly sliced
- 1-2 red chilies, chopped (optional, for heat)
- 1 egg (optional, for topping)
- 1 tbsp soy sauce
- 1 tbsp sweet soy sauce
- Salt and pepper to taste
- Fried shallots, for garnish
- Sliced cucumbers and tomatoes, for serving
Instructions:
- Prepare the Rice:
- Make sure the rice is cold and separated into individual grains. If using freshly cooked rice, allow it to cool completely before frying.
- Sauté the Aromatics:
- Heat 2 tbsp of cooking oil in a large pan or wok over medium heat.
- Add the minced garlic, sliced shallots, and red chilies. Sauté until fragrant, about 2 minutes.
- Add the Rendang:
- Stir in the shredded rendang meat and 2 tbsp of the Rendang Spices Cap Rempah Minang. Fry for another 2 minutes until the meat is heated and well-coated with the sauce.
- Fry the Rice:
- Add the cooked rice to the pan, breaking up any clumps. Stir well to combine the rice with the rendang meat and sauce.
- Add the soy sauce, sweet soy sauce, and a pinch of salt and pepper. Continue to stir-fry for 3-5 minutes until the rice is well-coated and heated through.
- Cook the Egg (Optional):
- In a separate small pan, fry an egg sunny-side up or as desired. This will be used to top the fried rice later.
- Garnish and Serve:
- Serve the nasi goreng rendang on a plate, topped with the fried egg.
- Garnish with fried shallots and serve with sliced cucumbers and tomatoes on the side.
