Lupis Recipe

Ingredients:

  • 2 cups glutinous rice (sticky rice)
  • 1/2 teaspoon salt
  • 2-3 pandan leaves, knotted
  • Banana leaves or aluminum foil (for wrapping)
  • Toothpicks or kitchen twine (for securing the wraps)
  • 1/2 cup grated coconut (steamed or lightly toasted)

For the Palm Sugar Syrup:

  • 1 cup palm sugar
  • 1/2 cup water
  • 1-2 pandan leaves, knotted (optional)
  • A pinch of salt

Instructions:

  1. Prepare the Rice:
    • Rinse the glutinous rice several times until the water runs clear.
    • Drain the rice and mix with the salt.
  2. Wrap the Rice:
    • Take a piece of banana leaf or aluminum foil and form a cone shape.
    • Fill the cone with the glutinous rice, pressing it down gently.
    • Fold the top of the cone over to close it, then secure with a toothpick or kitchen twine.
    • Repeat until all the rice is used.
  3. Cook the Lupis:
    • In a large pot, bring enough water to a boil to cover the lupis.
    • Add the pandan leaves to the water for extra aroma.
    • Carefully add the wrapped rice cones to the boiling water.
    • Boil for about 2-3 hours until the rice is fully cooked and tender. You may need to add more boiling water as it evaporates.
    • Once cooked, remove the lupis from the water and let them cool.
  4. Prepare the Palm Sugar Syrup:
    • In a small pot, combine the chopped palm sugar and water.
    • Add the pandan leaves and a pinch of salt.
    • Cook over medium heat, stirring occasionally, until the sugar dissolves and forms a thick syrup.
    • Remove from heat and let it cool slightly.
  5. Serve the Lupis:
    • Unwrap the cooked lupis and cut them into desired pieces.
    • Arrange the lupis pieces on a serving plate.
    • Sprinkle with the grated coconut.
    • Drizzle generously with the palm sugar syrup.

Tips:

  • If using banana leaves, you may want to soften them by briefly passing them over a flame or soaking them in hot water to make them more pliable for wrapping.
  • Lupis can be stored in the refrigerator and served chilled, but the coconut should be added just before serving to keep it fresh.
