- 2 cups coconut milk
- 1 cup water
- 2 pandan leaves, knotted (optional)
- A pinch of salt
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- Prepare the Ingredients:
- Peel and cut the bananas into bite-sized pieces.
- If using, dice the sweet potatoes and yams into small cubes.
- Cook the Base:
- In a large pot, combine the water and coconut milk.
- Add the chopped palm sugar, granulated sugar (if using), pandan leaves, and a pinch of salt.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugars.
- Add the Sweet Potatoes and Yams:
- If using sweet potatoes and yams, add them to the pot first.
- Reduce the heat to low and simmer for about 10-15 minutes or until the sweet potatoes and yams are tender but not mushy.
- Cook the Bananas:
- Add the banana pieces to the pot.
- Continue to simmer for another 5-10 minutes or until the bananas are soft and cooked through.
- Add Flavoring:
- Stir in the vanilla extract, if using.
- Adjust the sweetness to taste by adding more granulated sugar if necessary.
- Remove the pandan leaves before serving.
- Serve:
- Serve the banana kolak warm or at room temperature in bowls.
